I like that there are explanations about the area of the world where the recipe was inspired from. I like that she adds explanations and tips. This really pulls you into the recipe and the experience of cooking it. When I think exotic, I figured it would be hard to find ingredients, too. Good to know that you had most of it.

I love that the recipes come from all over the world, not just one region, and the Mexican chocolate loaf cake sounds delicious! Line a large baking sheet with parchment paper and grease the paper with a bit of the melted butter or cooking spray. Lay 1 sheet of phyllo on top and brush with melted butter or use the cooking spray.
Lay another on top and repeat the process until all 8 sheets are layered and buttered. You don't have to be too dainty, since the phyllo will be broken up for the custard. In a medium saucepan, combine the milk, heavy cream, sugar, vanilla bean, and almond extract and bring to a strong simmer.
Be careful because it can easily boil over. Remove from the heat and let steep 10 minutes. Crack the eggs into a large bowl and beat. Ladle a bit of the hot milk mixture into the beaten eggs and whisk. Slowly raise the temperature of the eggs by adding the hot milk mixture, a little at a time, whisking between each addition until the milk mixture and eggs are thoroughly combined.
Grease a 9-inch round cake pan with a bit of the melted butter or cooking spray and place on another baking sheet to catch any juices that might drip. Break the phyllo sheets into pieces.
